Ingredients

4 ripe bananas

4 pitted dates

1 cup oats (if you have jumbo oats only, then grind them for a couple of seconds).

½ cup flour (plain, wholemeal, gluten free).

½ teaspoon baking powder

½ cup oat, almond or rice milk

1 teaspoon coconut oil
-
½ vanilla pod or a dash of vanilla

½ teaspoon ground cinnamon

pinch of salt

some oil for frying
Method

Cut 3 bananas and dates, put everything in a bowl, add coconut oil and the milk and blend until the mixture is smooth.

Add all dry ingredients to the mixture and mix thoroughly.

Slice the last banana, and stir it into the mixture as well.

If you have time, leave the dough for 10-15 min.

Pre-heat the frying pan on medium heat, and grease the pan with coconut oil or any other oil of your choice

Put the dough on the prying pan with a tablespoon. Fry pancakes for 2-3 minutes from each side.

Serve with maple syrup and fresh summer berries. Beautiful!
